Brisket Philly Calzone
Crust:
2 1/2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
3/4 cup + 2 tablespoons (7oz) water, roughly
1 tablespoon olive oil
In a mixing bowl, combine the flour, baking powder, and salt. Whisk until thoroughly combined and set aside.
Combine the water and oil in a cup.
Slowly add the water mixture to the flour mixture, holding back a little in case you don't need it all.
Using a wooden spoon, or your hands, mix until the dough should be soft, but not sticky. Add a splash more water if your dough is too dry.
Lightly flour your work area and a rolling pin then roll dough into a 12-inch circle using your hands
Transfer the pizza base to a nonstick pizza base or large baking tray.
Filling (per calzone):
4 oz City Barbeque Brisket, cubed.
4 oz mozzarella or provolone cheese (shredded)
¼ cup yellow onion, sliced thin
¼ cup green pepper, sliced thin
2 mushrooms, sliced thin (optional)
Preheat oven to 375 degrees.
Toss ingredients, add to center of pizza dough. Folding crust over and use water to press and folding the perimeter. Pierce top of dough to allow steam to escape. Bake for 25-30 minutes until golden brown.
Brisket + Blue Salad
Ingredients:
4oz City Barbeque Brisket
3-4 Tbsp blue cheese
Cherry tomatoes
Cucumber
Red onion
½ small avocado
3 cups spring mix
Equal parts olive oil and vinegar for dressing (or add any dressing you prefer)
Instructions:
Dice red onion and cucumber, quarter cherry tomatoes, and cube avocado. Pro tip: our garden salad already comes with spring mix, tomato, cucumber, and red onion, just ask for no parmesan cheese.
Tear brisket into small pieces and combine with veggies and spring mix
Top with blue cheese crumbles and your favorite dressing and enjoy!
