This is what started the business. In 1997, our founders won a national championship with the very brisket you can get every day at City Barbeque. Hand rubbed with our special recipe rub, it is then lovingly placed in the hickory wood-fueled smokers by our Pitmasters where it will spend hours. Cooked low & slow over indirect heat in the smoker, patience is key to great brisket.
