Beef Tenderloin with Tomato-Bean Salsa!

We had a great time yesterday hanging out at the Ohio State Fair and the Taste of Ohio Cafe demonstrating how to make the summer sensation that is Beef Tenderloin with Tomato-Bean Salsa.

This meal is the perfect choice for when you want to show your friends and family you can actually cook, not just pick up City Barbeque for every summer gathering (wait, what’s wrong with that? Nothing!)

But really, sometimes it’s nice to show you’re cabable of making a meal from scratch, and this is the perfect simple recipe for those who are more “carry-out” inclined:

Ingredients

 15.5 oz. canned white beans, rinsed and drained

2 medium tomatoes, seeded and chopped

1 average sized cucumber, peeled and chopped

¼ cup red onion, finely chopped

¼ cup avocado, diced

2 Tbsp basil, fresh, chopped

Cilantro, minced garlic and lime juice to taste (secret ingredients!)

1 Tbsp red wine vinegar

¾ tsp table salt

1 lb. raw lean beef tenderloin, trimmed

1 Tbsp lime juice

1 ½ tsp olive oil

Other materials needed

Plastic wrap

Meat mallet

Serves: 4

Prep time: 7 minutes

Cook time: 10 minutes

Salsa:

Toss white beans, tomatoes, cucumber, onion, avocado, basil, secret ingredients, vinegar and ½ Tsp of the salt in a serving bowl. Refrigerate.

Beef:

Cut tenderloin lengthwise into four thick pieces. Place slices in between two pieces of plastic wrap and pound with meat mallet (a heavy saucepan would also do the trick) to ¼ inch thickness. Sprinkle the slices with lime juice and remaining ½ Tsp salt.

Heat the oil in a large nonstick pan over medium-high heat. Add the beef and cook until browned and cooked through, about 3 minutes each side. Serve with salsa.

Yields 1 slice beef and one cup salsa per serving.

Spring!

Sunday was the first day of Spring!  We are excited about spring.  That means it’s time for you to bask in the sun on our patio and enjoy some award-winning hickory smoked succulent meat, homemade sides, and nectar of the South, SWEET TEA!  Did you know we brew this on our back stove every day?  Just like you would make it at home if you had all the time in the world.  Well if you don’t, come out and visit us on our patio or dining room and get some tea.  Cheers to spring and the end of winter!

Smokehouse Chili

Made with a killer combo of City Barbeque signature brisket, pork and sausage with just a little kick. We’ve tossed in some green peppers, onion, black beans and other secret ingredients to make this the perfect hearty chili to hit the spot on a cold day.
